Tomato Couscous …

Whilst on holiday I discovered the brilliant ‘They Draw and Cook’ cookbook – my ideal cookery book! They have a website too, click here to find out more.

The first recipe that I cooked was Tomato Couscous. I adapted it slightly so that my boys would eat it, here’s the recipe:

serves 4

200g couscous

1 carton passata

10floz vegetable stock

1 red onion, finely sliced

1 tbsp white wine vinegar

3 tbsp olive oil

handful basil leaves

optional: feta cheese, diced and 3tbsp capers

Put the couscous in an ovenproof dish, add 3/4 of the passata and the vegetable stock, mix well and add the basil leaves. Put the dish in the oven for 15 minutes at 190 C. Whilst this is cooking, gently fry the onion, once they are soft, add the remaining passata, the white wine vinegar, 1 tbsp of olive oil and some seasoning. Remove the dish from the oven and stir in the onion mixture, return the dish to the oven for 5 more minutes. If using, fry the feta cheese and the capers. Serve the couscous with capers and feta cheese either on top or stirred through:
